Picknick with Danish ‘Smørrebrød’

Winter are over us but you can still enjoy a picknick. I am inviting you into my universe wearing a sweater and a wool scarf. Don`t let yourself be limited by the cold.
I do not have to go far therefore I use my backyard to set the lunch table.
I will give you the recipe of danish `smørrebrød´which means open sandwiches on ryebread.

INGREDIENTS for 2

  • Ryebread
  • 1 avocado
  • 1 sharon fruit
  • Spinach
  • Vegan mayonnaise
  • Fruit pearls
  • Red peber
  • Small tomatoes
  • 1 Parsnips
  • Salt and pepper

HOW TO

  1. Turn on the oven to 190C.
  2. Slice the parsnips in thin strips and place it on baking paper with oil and sprinkle with salt. Place a whole red pepper on the baking paper. Let it get golden approx., 10-15 minutes.
  3. Spread the bread with plant-based butter. Place spinach on the bread.
  4. 2 bread with the halved tomatoes and red pepper cut of the stalk and the skin. Decorate with vegan mayonnaise and the crispy parsnips.
  5. The other 2 bread with thinly sliced avocado and Sharon fruit. Decorate with mayonnaise and fruit pearls. Sprinkle with salt and pepper.
