Rice`n Curry & fried tofu

I am sure that this curry rice with tofu will be your favorite. Tomatoes melts in yellow rice and compose a unique taste experience. Never be afraid of doing something new. I used lots of plant-based butter from Naturli, a danish brand. Plant-margarine will be a splendid choice as well. Garlic, red onion and beans was frying in lots of plant-butter and poured over the rice before it went into the oven.

The dish will be in the oven for about 20-25 minutes, time enough to fry your soaked tofu.

Ingredients

  • Rice, for 4 person
  • 1 tbsp. curry
  • 1 tbsp. turmeric
  • saffron treads
  • green beans
  • 1 red onion in boats
  • 2 cloves of garlic, crushed
  • 1 red pepper in smaller boats
  • 150-200g plant-based butter or margarine
  • 1 lemon, in quarter
  • 6 tomatoes with stalk.
  • fresh coriander
  • salt and pepper
  • block of Tofu in quarters 2×2
  • 1 lime, the juice
  • white soy or Tamari sauce
  • 2 tbsp. sesame oil
  • Polenta or cornflour
  • frying oil, grape seed
  • Dulce seaweed (søl)
  • oil spray

How to do

  1. Let the tofu squares soak in lime juice, soy sauce and sesame oil . If you can do it a day before it great or just let it soak for a couple of hours.
  2. Cook the rice with curry, turmeric, saffron and salt stir well and let it cook under a lid for about 10-12 min. (look at the bag of rice for cooking instruction) Stir well and let it rest for about 10 min.
  3. Turn on the oven to 190C
  4. Prepare the vegetables and melt the plant-butter on a hot frying pan together with the garlic. Start frying the onion, then the red pepper and after some minutes the green beans. Sprinkle with salt and pepper and stir in the rice so the butter and vegetables will be mixed.
  5. Pour over the rice and vegetables to an ovenproof dish, sprinkle with salt and a bit more butter or margarine. Place the 4 square of lemon and the tomatoes. Put the dish in the oven for about 20 min.
  6. Prepare a hot pan with sprayed oil and fry the Dulce seaweed for 30 seconds and turn it. let it soak on kitchen towel and let it rest.
  7. Drain the tofu and keep the sauce it have soaked in. Cover each tofu square with Polenta flour, warm up the grape seed oil until it is frying ready. Pour in some of the tofu squares and turn it around. When ready and golden let it soak on kitchen paper and let it rest.
  8. When the rice is finish, turn of the oven and pour over the sauce from the tofu and let it stay in the oven for 5 min.
  9. Add the tofu, crispy seaweed and fresh coriander. Ready to serve.
