Chopp the onion, and fry in some oil until tender add the tomato sauce and mix it well, add it to the bottom of an ovenproof pan, sprinkle with nutritional yeast.
Slice all the vegetables and add in alternating patterns.
Chop the herbs and mix with crushed garlic, olive oil, salt and pepper. Spoon the herb seasoning over the vegetables.
Cover the pan with foil and bake for 40 minutes. Uncover, then bake for another 20 min. until the vegetables are softened. Let it bake for 25-35 min. until golden.
