SUSHI RICE
  1. Cook the rice together with the pink or red curry for about 12-14 minutes or just cook it without. Read on the package of rice how much water you have to fill in. Mix the sugar, vinegar and salt together, make sure the sugar is melting a bit together with the vinegar. When the rice is finished pour it over in a bowl to cool down for about 15 minutes, use a fork to make it airy before you add the vinegar sugar combination, and stir carefully. Let it rest until it has been cooled down. Roast the sesame seeds in a couple of minutes on a pan until golden, set aside and let them cool down.
VEGAN MAYONNAISE
  1. Pour in mustard, apple vinegar, salt and garlic in a jug of metal. Use a hand blender to mix the plant milk in slowly. When it is thicken a bit pour in the oil slowly while mixing with the blender. Just go up and down to mix it. When it has become creamy set it aside in the refrigerator.
SUSHI
  1. Slice the veggies and prepare a bamboo mat to make the sushi. First place the Nori seaweed paper on the mat and fill in some rice with your fingers about half the Nori and a little more. Flat it out a little, so it’s assembled, but not too thick layer. Prepare a a piece of plastic wrap over the the rice and paper, turn it so the plastic wrap is at the bottom on the bamboo mat.
  2. Use a couple of tsp. mayonnaise at the paper side where there is no rice underneath. Just lubricate the mayonnaise out on 5 cm. Fill in avocado, carrots and apple, not too much. Start rolling using the mat and you fingers to get it firm and round. Now you have to decide either to turn it around in sesame, put on a layer of avocado or roasted onions. Wrap it in the plastic, put aside and go on to the next one. The last sushi roll can be made simple, the rest of the rice in a thin layer on 5-6 ca. and fill in the veggies and mayonnaise rolling it around.
TAHINI SAUCE
  1. Mix all the ingredients for the sauce with a spoon and put aside until finished
PREPARE THE SUSHI
  1. Cut about 8-9 pcs. of each sushi-roll, start in the middle and go out using a sharp knife, make it wet occasionally. Top some of the sushi with the tahini sauce a slices of chilli. Sprinkle with roasted sesame seeds. Enjoy together with soy sauce and tahini sauce.
Recipe Notes

Take care the rice is not overcooked, it will cook further when it rest.
