Easy great Dhal with home made flat bread and whole grain rice is one of the best winter recipes I know. I haven`t seasoned it with chilli, because of the children and the young at heart who think it is too strong. You can spice it as you like.
I’ve never met anyone who does not like Dhal. There are lots of good things in this dinner that provide satiety and energy. Hope you will enjoy this creamy version of Dhal as much as we do.
After frying all the spices, add the diced eggplant and stir well. Pour in the crushed tomatoes, vegetable stock and lentils. Let it cook for 25 minutes before adding the coconut milk.
You can start making the flatbread dough. Combine all the ingredients in a food compressor, divide the dough in 8 pcs. and use a rolling pin to roll the dough out into small flat circles.
Place the sheet of parchment paper over the circles, one by one and place a wet kitchen towel over it to prevent them from drying out before baking on the frying pan.
