Portobello’s are huge mushrooms that tastes so good, when you fry them and filled up with some good vegetables.
If you are like me and want something healthy, but easy food to make for lunch or dinner, this recipe will be something for you. If you do not have time for to grate the beets, then buy it shredded. It can be eaten cold and is perfect for the lunch box.
- 4 Portobello
- 1 Raw peeled Beetroot shredded
- 1 White and red striped beetroot in thin slices
- 1 handful basil
- 1/2 avocado
- Juice from half a lemon
- 1 tbsp. soya fraîche
- Olive oil
- 1 garlic
- a slice of vegan cheese
- cashew nuts after taste.
- Take a pan and heat it up for high temperatur and fry the mushrooms for 2 min. on each side, cut it in half gently. Cook for a few minutes on each side in some oil. Dry it on some kitchen paper, it will absorb the water.
- You can choose to use 2 mushrooms for each burger and fill in each layer. Shredded beetroot -sliced beetroot - pesto- watercress.
